Harvard Beets
Steam raw beets until cooked through (35-45 min). Soak in cold water. Slice.
Sauce:
1TBSP Cornstarch
1/2 cup sugar
1/2 tsp salt
1/2 cup white vinegar
2tsp margarine/butter
3 cups cooked beets
Mix cornstarch, sugar and salt in pot over med heat. Add vinegar and boil for 5 minutes stirring constantly. Add butter and beets. Remove from heat and let stand for 10 min
