Salsa Fresca:
- 2 cups chopped fresh tomatoes
- 1 cup diced onion (color of choice)
- 1 cup chopped fresh cilantro leaves (optional)
-1 cup yellow corn kernels
- 3 scallions, chopped
- 2 jalapeño peppers, seeded and diced
- 1/4 cup lime juice
- Salt and pepper to taste
Toss all together and refrigerate until ready to serve!
